The art of life at hotel

Ensconced in the upper portion of the médiéval village of Seillans, opposite the two famous rocks, the résidence is a former private home built in the 17th century that once belonged to Scipion, knight of the Flotte d’Agout. Facing the square graced by majestic plane trees overhanging the Fontaine d’Amont, this bastide reflects the authentic character of a Seillans village house.

Julie and Nicolas Malzac have drawn on their combined years of expérience in luxury accommodation (In Paris at the hotel Lancaster following the installation of its new restaurant by Michel Troisgros, in Lyon with Paul Bocuse, at the Cour des Loges and at the Château de Bagnols, with Michel Guérard in Eugénie-les-Bains, among other legendary establishments) in order to preserve the spirit of this lovely family résidence, while providing a level of quality meeting, if not surpassing, the expectations of discerning guests. From the sélection of the interior décoration to the refinement of amenities and services, Julie and Nicolas Malzac bring passion and perfectionism to all aspects of their offering, to ensure that their guests will fully expérience the charm of this unique hotel.

After having enjoyed a refined meal, retire to the drawing room to savour a cigar, catch up on some Reading, converse with other guests or simply to bask in a moment of tranquility.

The village of Seillans

Sprounting from its fragrant hilltop, surrounded by olive groves, the village of Seillans bears witness to a past intimately linked to the Saracen invasions of tje 10th century. A few stones still remain from the walls that once wrapped around the entire hill town. Over the centuries, houses were built in tiers with the stone beneath them, thus seeming to grow out of the rock, from the distance creating a mosaic in shades of grey and honey-gold spotted with the pink of their roof tiles. As you wander the narrow, cobblestone Streets, here a sculpted façade, there an ancient door or basrelief bring legends to life, speak of sacred and secular traditions. Its central square shaded by hundred-year-old plane trees, their gentle rustling accompanied by the peaceful whispering of the Fontaine d’Amont, Seillans epitomises the true douceur de vivre of Provence. The village’s charm has inspired many artists, including Max Ernst who lived here for a number of years, or more recently the photographer Doisneau. Un très belle établissements ou l'on y mange vraiment bien. J'ai eu l'occasion de goûter un plats du jour et je me suis régalé, les légumes étaient cuit à la perfection croquant et pleins de goût le blanc de volaille …

Un délice du début à la fin. Déjà le cadre est sublime, au calme a l'ombre de la fontaine nous sommes bien installés. Le service est excellent et efficace. L'entrée de l'ardoise était dune légèreté parfaite: betteraves et mousse de chèvre. J'ai pris le risotto aux gambas en plat, le lait de coco et la citronnelle en ont fait un plat succulent! Et en dessert le crumble a la mirabelle a terminé d'enchanter mes papilles. Un sans faute : fin, léger et délicieux.
